Sunrise Breakfast Bowl

Rice, Egg, Avocado, Yogurt, Harissa. The colors of this bowl are as pretty and vibrant as a So Cal sunrise. It’s really simple to make; just fry up an egg, steam some rice and stick it all in a bowl. Harissa is a Moroccan chile paste, one of my favorite things to use to give a dish some spice and color. You can find it in specialty food stores—and if you can’t find it—use any spicy chile paste or salsa instead.

WHAT YOU NEED:

  • 2 tablespoons plain Greek-Style yogurt
  • ½ cup steamed brown rice, wild rice, or quinoa
  • ¼ avocado, thinly sliced
  • Sea salt and freshly ground black pepper
  • 1 or 2 fried or poached eggs
  • 1 big spoonful Harissa (or any store-bought chile paste)

WHAT TO DO:

Smear the yogurt on the bottom of each bowl and pile the rice or quinoa on top. Lay the avocado slices on the rice and sprinkle them with salt. Put the egg(s) to the side of the avocado and plop a big spoonful of harissa onto each bowlful of goodness. Dig in and enjoy.
