Lentil Soup for Prosperity
In Italy they ring in the New Year with lentils. Each little lentil represents a coin, and eating them is supposed to bring prosperity in the year ahead. Since I love lentils, Italy, and prosperity, in all its forms, I made q big pot of lentils every New Year’s Day and served them. I hope you enjoy this easy-peasy and delicious recipe as much as we do.
